Spiked apple sauce



My new garden has two apple trees. My parent’s garden has two apple trees. That makes a whole bunch of apples in a good year, I can tell ya. Now, what to do with them? In the first months of autumn you’ll go for apple pies, cakes and muffins, or you’ll eat them right off the tree. By the beginning of December you just want them gone. But since throwing away perfectly delicious food is a crime that I try to avoid by any means, apple sauce is the key here. It’s easy, it’s fast and it is super-yummy. And a little rum or whisky in it, can’t hurt either. Still need some homemade Christmas presents? This is it!

Pear and Gorgonzola Soda Bread



I have a promise to make. I promise that I will learn how to photograph food. Because I have in no way stopped baking. In fact only this week I made batches and batches of snickerdoodles and lemon and poppy seed cookies. But I am a total disaster when it comes to cameras. In fact I don’t even own one and my camera phone doesn’t work. And since my dearest photographer, who just also happens to be my dearest husband-to-be, can unfortunately not be with me and my food during the week, we have to make due on the weekends. But I will be better. I will get a camera and start working on it. Also, did I mention that the photographer kept our cat and I got an adorable puppy from the shelter? Just on a side note. Our family-to-be is already growing. All this has nothing to do with this great soda-bread. Which is amazingly delicious and not photographed by me or the dog.

Pumpkin and grape pizza




The word of this season is process. Everything evolves. Everything moves forward. Even though this is definitely a good thing, it can be a bit overwhelming at times. Good thing we still have pizza to rely on. Because even an evolved pizza with cream cheese, pumpkin and grapes is stillpizza! Enjoy this bright orange, dotted with grape jewels, best-of-autumn dish!

Pumpkin Cheesecake



One of the greatest advantages living in the countryside is that you can really live and cook seasonal. And I can tell you, autumn is here big time! In my garden, fat orange jewels are shining through the green leafs. That’s right my friends, the pumpkins are ready! I make soup with them, roast them in the oven or, as in this case, include them in the best pumpkin cheesecake ever! You gotta be fair, pumpkins wanna be sweet too sometimes…anyway, bake it, indulge in the scrumptious bites, listen to quiet music and let fall begin!

Chocolate Truffle Mini Muffins



Ok, I am back. I am sorry for my absence- it definitely took me some time to get into the swing of things with me moving and taking up a new job and all. But baking always helped me to keep my balance, so now I am back climbing the mountain of glorious baked goods and scrumptious challenges. Let’s ease back in. Let’s start with something simple and loveable. Let’s start with chocolate. And maybe let’s add some bourbon to that. Or peanut butter. 

Date and Apple Muffins



I did it. I moved to the countryside. I am in complete no-mans-land. Alone. Without my man or my cat. But with a mill to look after, loads of cows and loads of new townspeople to meet. What a step. There are moments I wonder, if I’ve been foolish to come here. There are moments I wonder, why I haven’t come here sooner. And there are moments where I just have to get inside the kitchen and bake myself some decent muffins so I don’t go crazy. So, if in doubt, go get some baking done. It helps. 

Pear and caramelized walnut pie




Pears and walnuts – again? Yes again. Don’t judge! First of all because pears and walnuts are always a great combo, so there is nothing to judge about it. Also, did I mention that I am currently moving, starting a new job and planning our wedding? No? Because I totally do. And it’s a lot of stuff to work on, I can tell ya. So a simple ole pie with things I found in my pantry is all I can master these days. And really – when was a pie ever not great? Especially when filled with sweet pears and caramelized walnuts.
