Spiked apple sauce

My new garden has two apple trees. My parent’s garden has two apple trees. That makes a whole bunch of apples in a good year, I can tell ya. Now, what to do with them? In the first months of autumn you’ll go for apple pies, cakes and muffins, or you’ll eat them right off the tree. By the beginning of December you just want them gone. But since throwing away perfectly delicious food is a crime that I try to avoid by any means, apple sauce is the key here. It’s easy, it’s fast and it is super-yummy. And a little rum or whisky in it, can’t hurt either. Still need some homemade Christmas presents? This is it!

Date and Apple Muffins

I did it. I moved to the countryside. I am in complete no-mans-land. Alone. Without my man or my cat. But with a mill to look after, loads of cows and loads of new townspeople to meet. What a step. There are moments I wonder, if I’ve been foolish to come here. There are moments I wonder, why I haven’t come here sooner. And there are moments where I just have to get inside the kitchen and bake myself some decent muffins so I don’t go crazy. So, if in doubt, go get some baking done. It helps.

Tarte Tatin

I know, I know, Tarte Tatin is an old hat. But sometimes the oldest hats are your dearest ones. That is kind of how it is with this tarte. All straight forward, all assuring, simple and good ingredients. Really, the only thing I could deal making after my first week at the new job, with eight hour shifts and the additional hours of sitting in the train getting forth and back. Life is a hassle sometimes and you will not always find the time and energy to rustle up homemade doughnuts in your kitchen. That’s ok. Sometimes (or should I say most of the time?) you won’t want to do anything at all, after the day has come to rest. That is also completely fine. But I am telling you, a slice of the Sunday cake after a hard day, makes doing nothing, twice as sweet.

Apple season

I know apple season is almost over, but when it is in full swing, I am going apple crazy. My parents have an apple tree in the backyard and I swear they are the best apples you will ever eat (especially when you climb up to get the reddest and biggest ones high up)! I put them in everything I cook or bake, from savory to sweet. Apples are definitely the best fruit to pair with cake. Juicy and tangy flavors combined in a crumble or with cream – apple heaven!
In Germany when it is getting colder roasted apples are a big thing. Stuffed with nuts, raisins and marzipan, roasted in the oven and eaten with good vanilla custard, preferably at a fireplace. So homy! Well, here is how you put this feeling into a cake.
