Ok,
I am back. I am sorry for my absence- it definitely took me some time to get
into the swing of things with me moving and taking up a new job and all. But
baking always helped me to keep my balance, so now I am back climbing the
mountain of glorious baked goods and scrumptious challenges. Let’s ease back
in. Let’s start with something simple and loveable. Let’s start with chocolate.
And maybe let’s add some bourbon to that. Or peanut butter.

Date and Apple Muffins
I
did it. I moved to the countryside. I am in complete no-mans-land. Alone.
Without my man or my cat. But with a mill to look after, loads of cows and
loads of new townspeople to meet. What a step. There are moments I wonder, if I’ve
been foolish to come here. There are moments I wonder, why I haven’t come here
sooner. And there are moments where I just have to get inside the kitchen and
bake myself some decent muffins so I don’t go crazy. So, if in doubt, go get
some baking done. It helps.
Breakfast Muffins
I
know what you are thinking. Muffins for breakfast? Not really the healthiest
way to start your day. Especially since everybody I know seems to be obsessing
about these green smoothies lately. Really, you want to drink your spinach and
kale? Why? Anyways, these muffins are not as bad as a breakfast as you may
think: they have all kinds of healthy inside. Rolled oats, buttermilk and fresh
fruit. Now, does that sound healthy or what? I admit you could also totally
throw it all into the blender and drink you breakfast, if you feel like it. But
I never feel like drinking my breakfast, so I made all this goodness in muffin
form and had it for Sunday brunch with family. Big hit. Nobody ordered a green smoothie.

Chocolate Banana Muffins
Did
you guys survive the chocolate Easter egg battle and hunt down every last one
of those lil’ bastards? I for sure did, indoors by the way, cause who wouldn’t
love snow at Easter? If you start getting sick of all the chocolate by itself,
start making Easter egg cookies! I went for a more subtle chocolate version and
made Nigella’s chocolate banana muffins. If you, like me, seem to always have
slightly elderly bananas lying around the house, but not all the ingredients
for a decent banana bread, these are a great option! Because throwing away food
is the worst, as all Easter bunnies know! Happy belated Easter!
Fully packed muffins

am going to tell you a secret. A secret about muffins. The truth of that matter
is: you only need one perfect muffin base recipe and you’re set. Than you can
just add whatever flavors your heart desires and they turn out wonderful.
Ok, maybe this is not a huge revelation to you guys. It was for me though and it is very useful.
And without wanting to brag, because I usually am a very humble person, this poppy seed – pear- chocolate and marzipan chip flavor combination is divine. Like, heavenly divine! Allright, I start being my usual humble self again. Make yourself some muffins to get through Monday with a kickoff!

actually happens quite a lot where I live) and there is no way you want to
celebrate autumn or the beginning of the
weekend now – you just have to remember that there are countries where summer
is just around the corner. With blue skies, beaches and palm trees with
coconuts. And pineapples on bushes. Did you know pineapples grow on bushes? I
totally didn’t. I feel kind of guilty about not knowing where one of my
favorite fruits comes from.
So back to summer memories, sipping Piña Coladas on white sandy beaches. Bring that memory back to your kitchen on rainy autumn day with these little treats!
