Goat cream cheese risotto with raspberries



Here is the third part of our Very Berry recipe tour. Now this looks like a regular ole’sweet rice pudding, doesn’t it? But this is, in fact, marvelous savory risotto made with gorgeous goat cream cheese, whine and lots of black pepper. And the somewhat unusual but perfect counterpoint to that are fresh raspberries and some mint leaves. I dare you to try, it’s a real treat!

White chocolate raspberry tarte




All right, here it is. A thing of glory, a thing to marvel upon. The white Chocolate Raspberry Tarte from one of my new baking heroes. She just opened a lovely little café in our town and since then we have been enjoying our Saturday city tour endings with her genius Cheesecake Brownies or this marvelous tarte. If you ever come across here, be sure to check out her place, you will not regret it! This weekend has started on a very fun more upbeat note filled with great wine at a wine festival and has ended with a quiet Sunday full of cooking and baking – and obviously showing my mother all the love and respect she deserves! Hope you have spent your days just the way you like it! 

Raspberry and Almond Danish


Ok. This is handsdown the best thing I have made so far. The pastry dough is pure perfection, combined with the sweet almond and tart raspberry fillings and three different kind of glazes, a bite of this takes you into food nirvana. Despite the fact that this is heaven on a plate, it is also the most elaborate baking I did so far. It is not super difficult it just takes a while. The process of getting to a great Danish pastry is a similar to the buttery mess when making croissants. But you know what say: a little butter a day, keeps the doctor away! That is what they say, right? Now, I know this has not even popped up in your minds yet, but I love me an excuse for any festivity, so how about this for Easter brunch? Or just any ole Sunday morn’?
