Lemon Buttermilk Ice Pops



I scream ice cream! It was so blasting hot these past days that the only thing you could make in the kitchen had to be frozen at some point. So I unpacked my long stored ice pop molds and got to work. Well, if you can call stirring a few ingredients together work. Cause really, it’s not. Which is perfect, when it is 35°C outside. These buttermilk lemons ice pops are amazingly refreshing and perfectly manage the balance between tart and sweet. I will definitely have a ton of these in my freezer all summer long!


Baked poatoes with lemon



Well, yeah, this is not a cake. Or bread or even pizza. My excuse for this is that it was baked in the oven, like a cake would do...
Actually my excuse for this is that I am kinda under waters  with my still fairly new job and that sometimes I cannot, for the life of me, find the time and bake a cake on top of my usual cooking. So here I am, showing you one of my everyday-go-to-dinners.
And even though you can barely even call this cooking – I promise it is delish and gives you a happy ending on a hard day.
Also I am preparing for something marvelous. Two hints: raspberries and white chocolate. Just you wait and see. 

Lemon Polenta Cake



I decided to just bake and post so many spring inspired recipe, until the warm weather and sunny days actually arrive. So here we start with a bright yellow lemon polenta cake. Like sun on a plate. Did you notice those beautiful little speckles of color? This is from a wildflower sprinkles mix I got as a Christmas present from a lovely new friend of mine (fellow cat-lover and for sure unicorn in a former life) and I now use it to decorate about everything. I mean, isn’t it the prettiest thing to sprinkle flowers on your sweets? Hello, spring? Are you listening?

Vicki's Lemon Pie



When I was still in school and living at home with my parents, my sister and me went on exchange abroad and our family also welcomed a lot of exchange students into our home. This was definitely one of my most enriching and exciting experiences, which, on a side note, obviously also opened my eyes to loads of new recipes and different styles of baking and cooking. So these Lemon Meringue Pies made their way to me through a lovely lady, Vicki, from Australia, with whom we had the pleasure of living for a while.
This weekend I searched for a special thing to make for girls night with three darlings that I got to know in the new city, where I live for almost half a year now. Well, and these pies, made in individual dishes, for less bickering over who gets the last piece, were just the perfect thing to gorge on with a good Cosmopolitan in your hand. By the way, crushed ice made by hammering on a block of ice with a rolling pin – totally works. So thank you Vicki, for sharing this recipe with me, and thank you to the three girls that made Friday night so much fun!
