Nectarine Sheet Cake




Sometimes, summer can float by in a hazy pastel-colored blur of sunshine prickling on your skin, amazing news and lazy days spent lying in the warm grass. At least this was definitely how my vacation felt like. It was perfect. Including great local Island food, active beach days, Ice Cream and bee stings. Summer is for sure my favorite season. How was your summer so far? Went for a picnic already? Well than you better get going and take some pieces of this simple but great sheet cake with ya!



Ingredients

700g Nectarines
350g soft butter
350g white sugar
1 ½ tsp. vanilla extract
6 eggs (medium)
500g all-purpose flour
3 tsp. baking powder
250g Greek yoghurt
2 tbsp. brown sugar

Cut up your nectarines into chunky pieces and set aside. Cream the butter, sugar, salt and vanilla and incorporate the eggs on by one. Mix until pale and creamy. Mix flour and the heaped teaspoons baking powder. Now stir the flour and yoghurt into the butter and egg mixture by turns. Stir until everything is creamy marvelous. Gently fold in the nectarine chunks.



Spread the batter evenly onto a flat tray lined with baking sheet and sprinkle with two tablespoons brown sugar. Bake for about an hour in the 200°C oven. 


This cake is moist and scrumptious and perfect for feeding a lot of people on the go when only equipped with napkins. Summer picnics, here we come!
