Peanutbutter Chocolate Cookies

Ok, this is a serious warning. This will probably one of my last posts that will not somehow involve Christmas or Christmassy things. I love Christmas. I really love it. I really really love it. So if you are a convinced Christmas hater, for which reason whatsoever, you really have no business reading this blog, until Christmas is over. I will be annoyingly posting Christmas songs, Gingerbread, mulled wine and trying to decorate everything, including myself, in red, green and gold. So, I guess, you got the point.
For now, just enjoy your weekend with a good batch of all-year-great-tasting chocolate cookies filled with peanut butter. No red, green or gold involved.






Ingredients 

Cookie dough:
115g soft butter
210g dark-brown sugar
1 egg
1 tsp. vanilla extract
190g plain white flour
½ tsp. baking powder
50g non-sweetened cocoa
65g peanut butter
Peanut butter filling:
100g peanut butter (dugh!), your favorite kind
20g confectioners’ sugar


Mix the cookie dough as always, first butter and sugar, add the egg, combine with the rest. It should end up being a firm cookie dough ball. Stir the peanut butter and icing sugar together with a fork. The sugar will make the peanut butter a little firmer.  Now, baking sheet on baking tray and press little cookie dough balls next to each other on the sheet. Than the filling in the center (a little less than the dough) and cover it again with dough.


Depending on the size of you cookies, they will need 10 to 15 minutes in the oven at 180°C degrees. I got about 22 out of the batch.
