Lemon Buttermilk Ice Pops



I scream ice cream! It was so blasting hot these past days that the only thing you could make in the kitchen had to be frozen at some point. So I unpacked my long stored ice pop molds and got to work. Well, if you can call stirring a few ingredients together work. Cause really, it’s not. Which is perfect, when it is 35°C outside. These buttermilk lemons ice pops are amazingly refreshing and perfectly manage the balance between tart and sweet. I will definitely have a ton of these in my freezer all summer long!




Ingredients

3 lemons, juice and zest of 1
100g white sugar
500ml buttermilk
some vanilla

Rub the zest of one lemon and some vanilla into the sugar. Now stir the sugar into the lemons juice until it dissolves. Have a taste, if you find it to sweet add more lemon if too tart, add more sugar. Now stir in the buttermilk til everything is combined. 



Resist the urge to drink it all and fill the liquid in your ice scream molds (they are not expensive at all and you can currently find them everywhere). Freeze overnight. To get the pops out of your molds shortly let them stand in warm water. And now we all scream ice scream!
