Blackberry Galette



This is the final part of the Very-Berry series and definitely my favorite one – a version of Nigella Lawson’s blackberry gallette. So simple and sooo scrumptious. It is the perfect way to incorporate early, maybe somewhat tart, blackberries in a quick, sweet afternoon treat to enjoy with freshly boiled cup of tea. Please do try this one! It is perfection!





Ingredients

60 grams plain flour
30 grams polenta
1 scant tablespoon caster sugar
¼ tsp. salt
65 grams cold butter
2 tbsp. iced water (or enough to bind)

150g blackberries
ca. 3 tablespoons brown sugar
3 heaped tablespoons cream cheese
Sift the dry ingredients for the pastry together and rub in the butter with your hands. Knead in the water until everything is combined. Form the pastry in to a patty, wrap in cling film and of it goes into the fridge for 30 minutes. Have patience and wait. Maybe quickly make a jug of strawberry-rhubarb jam to relax (or is that just me that finds this relaxing?). Ok now take the patty out roll out flat, about the size of a pizza and spread with cream cheese. Fold in the edges. 

 
Sprinkle with some brown sugar and scatter the blackberries on top. Again a little sugar and in the preheated 190°C oven for about 20 minutes. 



Enter heaven and enjoy warm with a drink that makes you smile (for me that would my parent’s black tea). And now everyone repeat out loud: Berries are the greatest!
