Did
you guys survive the chocolate Easter egg battle and hunt down every last one
of those lil’ bastards? I for sure did, indoors by the way, cause who wouldn’t
love snow at Easter? If you start getting sick of all the chocolate by itself,
start making Easter egg cookies! I went for a more subtle chocolate version and
made Nigella’s chocolate banana muffins. If you, like me, seem to always have
slightly elderly bananas lying around the house, but not all the ingredients
for a decent banana bread, these are a great option! Because throwing away food
is the worst, as all Easter bunnies know! Happy belated Easter!
Ingredients

very ripe/overripe bananas
150ml vegetable oil
2 eggs
140g brown sugar
225g plain flour
1 tsp. baking powder
55g non-sweetened cocoa

Mash
your bananas. Mix the sugar with oil and whisk in the eggs. Incorporate the
banana mash and add the rest of the ingredients. Whisk until there are no lumps
left (except maybe banana lumps, I like those!).
Bake at a 200°C oven for 15-20
minutes and enjoy your work with big cup of coffee. You can also share, if you
want or must. Life is that way sometimes.
