Coconut Rum Brownies

People, spring has finally arrived! So here just a quick sunny note from on yesterday’s Birthday Brownies! For one baking tray or 24 pieces:
350g butter, softened
400g sugar
6 eggs
120g non-sweetened cocoa
100ml treacle
½ tsp. salt
180g flour
good splosh of rum

Just mix butter and sugar until soft and creamy, add the eggs one by one and finally add the rest of the ingredients. Stir until the batter and satiny and smooth. Spread on a baking tray layered with a baking sheet. For the coconut swirl, mix 300g grated coconut, with 3 tbsp. cream, 3 tbsp. powdered sugar and two egg whites. Spoon on the cake batter. Bake at a 175°C oven for 25-30 min. I am off dancing in the sun – hope you have wonderful weekend!
